Terroir and wine-making
The choice to grow Chardonnay grapes on the estate of Dagala Borromeo is dictated by the qualities of a terroir with a dry and ventilated microclimate and with a strong thermal variation between day and night: these characteristics favor the ripening of the fruits, The optimum level is reached in the first ten days of August. In the cellar, the grapes are gently pressed and fermented at a controlled temperature. The vinification is completed with a 3-month aging on noble lees in stainless steel tanks with daily stirring.
