Terroir and wine-making

Papanero Cuvée Capoforte is a dry sparkling wine produced in the heart of Puglia. Once harvested in the second week of September, they are immediately prepared for vinification. It begins with the fermentation through maceration on skins, followed by aging in steel tanks for about 3 months. The vinification comes to an end with the taking of foam through the classic Charmat Method: slow and natural refermentation in autoclave with a constant temperature of 12-14°C. The result is a natural sparkling wine also in taste.

Notes of taste

The sparkling wine Papanero Cuvée is a 360° Apulian excellence: its intense red color with violet reflections embraces fruity and floral hints recalling cherry, strawberry and blackberry, violets and roses. The result is a pleasantly sweet and soft wine. The persistent and balanced taste makes the Papanero Cuvée Capoforte a sparkling wine to be enjoyed intensely.

Wine at the table

The Papanero Capoforte is perfect for tasty combinations with first courses and main dishes based on white meat, sausage, roast beef and cold cuts. The recommended service temperature is 8-10°C.

The Masseria Capoforte is located in the characteristic place of Salento and founded in 2000 by Ettore Ceschin.
